  • 3 tablespoons kosher salt
  • 2 tablespoons freshly cracked black pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • Red pepper flakes, to taste
  • ΒΌ cup finely ground hickory chips, preferably Cameron (see Note 2)
