Ingredients

  • 2 tbsp cooking oil
  • 6 king oyster mushrooms, about 400g/14oz
  • 1 tbsp minced garlic
  • 50 g pre-soaked wood ear mushroom, about ⅓ cup
  • 3 fresh chillies, thinly sliced, or Sichuan pickled chilli (see note)
  • 1 stalk scallions, finely chopped
  • For the sauce:
  • 1 tbsp Shaoxing rice wine
  • 1 tbsp black rice vinegar
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • ½ tbsp sugar
  • ½ tbsp cornstarch
  • 1 tbsp water
