This is my first chili recipe, but we like it so much I've stuck to this recipe each time I've made chili since. I make it with short ribs. It's a fair amount of work but it produces quite a bit of chili which I freeze in 1 qt bags. It freezes well and tastes good when slowly warmed back up.
The full recipe is on the Serious Eats site.
It's a fair amount of work to sear, debone and cut up the short rib, but it's worth it.
Before it goes in for the slow cook in the oven.
