Breadcrumbs were whole wheat... but for some reason the crumbs absorbed all of the butter/oil and were rather dry and cooling slowly on the pan. Had to cook longer and stuck thicker pieces in oven to finish cooking.
Ingredients
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter, melted
- 6 skate wings, each 6 to 8 inches across
- Kosher salt and freshly ground black pepper to taste
- 1 cup flour
- 2 large eggs, lightly beaten
- 1 cup bread crumbs
- ½ pound white mushrooms, thinly sliced
- 4 tablespoons lemon juice
- 1 tablespoon capers
- Fresh Italian parsley, chopped, for garnish
