½ small onion, finely diced
1 tomatoes, diced
3 Tbsp finely chopped fresh cilantro
½ jalapeño pepper, seeds removed and finely diced
1 garlic cloves, minced
½ lime, juiced

A molcajete is a Mexican mortar and pestle. There is an extensive Wikipedia article about molcajete. It's typically made from volcanic stone and is used for grinding things and is great for guacamole. It requires seasoning, much like cast iron skillets. The lamb was nice, but reminded me that maybe next time I can stew it a bit slower and make it more tender. I love stews though since they reheat well after freezing.

The red onion was a bit old and I misjudged the size of the mocajete so I ended up not being able to fit enough avocado so I edited the recipe to rebalnce the ingredients to fit my molcajete.
