Braised Chicken with Basil and Tomato

September 11, 2020 - 11:21:23 - Cooked it yesterday. Was nice and not sure what I'd do to improve the recipe. One substitution I made was that I use fresh oregano instead of dry.
Ingredients
- ½ cup table salt, for brining
- 1 ½ - 2 lb bone-in split chicken breasts, trimmed and each cut crosswise into 2 pieces of equal mass
- 1 ½ - 2 lb chicken leg quarters, separated into drumsticks and thighs, trimmed
- 1 Tbsp vegetable oil
- 1 onion, chopped fine
- 2 Tbsp tomato paste
- 4 garlic cloves, minced
- 1 tsp dried oregano
- ¼ tsp red pepper flakes
- 1 Tbsp all-purpose flour
- ⅓ cup dry white wine
- ¼ cup chopped fresh basil, divided
- 2 tsp red wine vinegar
