September 11, 2020 - 11:21:23 - Cooked it yesterday. Was nice and not sure what I'd do to improve the recipe. One substitution I made was that I use fresh oregano instead of dry.

Ingredients

  • ½ cup table salt, for brining
  • 1 ½ - 2 lb bone-in split chicken breasts, trimmed and each cut crosswise into 2 pieces of equal mass
  • 1 ½ - 2 lb chicken leg quarters, separated into drumsticks and thighs, trimmed
  • 1 Tbsp vegetable oil
  • 1 onion, chopped fine
  • 2 Tbsp tomato paste
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • ¼ tsp red pepper flakes
  • 1 Tbsp all-purpose flour
  • ⅓ cup dry white wine
  • ¼ cup chopped fresh basil, divided
  • 2 tsp red wine vinegar
