Crown Roast of Lamb

Ingredients
- Rub
- 2 tbsp of fresh rosemary - chopped
- 6 garlic cloves - minced
- 1 tsp of oregano
- 1 tsp of fresh thyme
- 2 tbsp of chopped parsley
- 1 tsp of lemon zest
- ½ tsp salt in addition to salt for brining
- 1 tsp of ground pepper
- light olive oil
- Sauce
- 1 tsp Dijon mustard
- 1 tbsp wine vinegar
Directions
Dry brine crown.
Make sure crown is round.
Make rub by combing herbs, pepper, lemon zest.
Preheat oven to 425ºF with cast-iron skillet large enough for the crown.
Cover lamb with oil then cover with rub.
Cover bones with foil. Put lamb on skillet.
Set thermometer timer for 125ºF.
When timer goes off, remove lamb and rest for about 15 min covered with foil. Should be 30 min or so of cooking.
Remove oil from pan but leave juice. Make warm, but not too hot and add vinegar and mustard and stir.
Carve lamb and serve with sauce.
