Edited recipe after first try. Reduced milk from 2 cups -> 1 cup. Reduced Cream Cheese from 4 ounces to 2 ounces. Increase other cheese from zero to 4 ounces. Added 2 large eggs.

Ingredients

  • 1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
  • Kosher salt
  • 1 cups whole milk
  • ΒΌ teaspoon finely grated nutmeg
  • 2 ounces cream cheese, cut into 1-inch pieces
  • 12 ounces sharp or white Cheddar, grated and 4 ounces Brie or other smelly cheese
  • 2 large eggs, lightly beaten
  • 3 tablespoons unsalted butter
  • Freshly ground pepper
