  • 8 cardamom pods, lightly crushed with the flat side of a knife, or 1 teaspoon ground cardamom
  • 2 teaspoons ground coriander
  • 1 tablespoon kosher salt
  • 1 teaspoon ground turmeric
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon black pepper
  • 2 ½ pounds boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 to 2 teaspoons garam masala, to taste
  • ½ cup canned unsweetened coconut milk
